Last night’s menu

The full menu cooked by Laura last night was Avocado gazpacho with cucumber, followed by Pork with Rhubarb and herby new potatoes from the Walled Garden.

The avocado gazpacho was delicious. It was made with Clandeboye yogurt which came into its own in this wonderful recipe. The recipe will be in the cookery book, eventually.

Pork – it obviously came from Angus Farm Shop – with Rhubarb is really inspired. We expect apple with pork, but at this time of the year there are only imported apples . Laura peeled the rhubarb so there was no trace of red. It gave the plate a lovely spring green palette, as you can see below.

Our first Walled Garden potatoes were simply superb cooked in oil, butter and with lots of flowering herbs. I would never have had the idea of cooking new potatoes in their raw state like that, but it brings the lovely flavours from all the ingredients.

The whole was accompanied by a bottle of Chȃteau Ferran 2007. Thank you Laura for a lovely evening.
