OK, so the main event is over, but there is still New Year to look forward to and we had a hard frost last night, even in the Walled Garden it was minus 6C. So to remind us of the productivity of that magic place, our own little Paradise I’m planning Tomato Consommé, Lobster Mousse, Mallard Duck with Cavolo Nero and a multitude of fruit sorbets as pudding. All except for the lobster is from the Walled Garden. Okay so some of it was in full fruit 6 months ago, but the Kale and the Cavolo Nero is still growing apace in the Glass Houses.
But tonight we’re having a small vegetarian favourite of mine Cauliflower Cheese. I just went up to cut it and here you see it growing right next to the Kale. It’ll be delicious with a robust glass of red wine. We certainly need something to warm us up. It’s been below 0C all day. Now that is rare at Ballywalter Park.
