Nature’s magic spears

Amazingly our asparagus are still coming up. I really love the green asparagus spears, but some say the white asparagus is the more delicate of the two. The thing about the green spears is that they are so easy to prepare. In Denmark white asparagus reigns supreme. It has to be partially peeled which is incredibly skilled and quite cumbersome. So give me a green asparagus any day if I’m in charge of the prep, but when you have a chef in charge, then clearly I’d be very happy to go with the white spear. Whether my palate is refined enough is neither here nor there if the pros are doing the prepping!
